Rømmemuffins med stikkelsbær:
2 egg +
150 g sukker - visp til eggedosis.
200 g rømme (ca 2 dl) - visp inn.
200 g mel +
1 1/2 ts bakepulver +
skal av 1/2 sitron - bland forsiktig i. (eg brukte sitrondropar)
Røra mi vart umiddelbart klumpete og full av luftboblar, antageleg rømma som reagerte med bakepulveret.
Fyll muffinsformar 1/2 full. Legg stikkelsbær på toppen. Steik ved 180 gradar i 20 minutt. Du kan lage vanleg kake i rund form, steik då 45 minutt.

Now that I've picked the goose berries in my garden, it's become much more quiet around the house. No more waking up at 5 am from the idiotic magpies terrorizing us all day. Joy! Last year we hardly had any goose berries, but this year we had quite a lot. Maybe it's because we've done as recommended; cut 1/3 of the old branches last year, and then this year after picking the berries. Now we have to eat them, so the search for some promising recipes started. I found this recipe on Pinterest, from the blog Nadel & Gabel. It was for a cake, or ceveral smaller squares. Since I only have cupcake molds, I used that one. I got 12 cupcakes, that took foreer to bake, because I filled them too much. They still tasted good, though. Here's the recipe:
Sour cream cupcakes with goose berries:
2 eggs +
150 g sugar - mix fluffy.
200 g sour cream - mix in.
200 g flour +
1 1/2 tsp baking powder +
zest of 1/2 lemon - mix in gently.
Fill the molds 1/2 full. Put goose berries on top. Bake for 20 minutes at 180 C / 360 F. You can use a round cake mold, and bake for 45 minutes.
